Although Blizzard is located on the west coast, they have datacenters that house a specific list of realms for different corners of the US. Each datacenter has a mix of west coast, east coast, and midwest realms for each of the realm types (pvp, rp, etc.) For example, I live in NJ. My nearest datacenter, according to that list, is in Boston.

It is actually pretty rare to find guilds that end early in EST, even on central or eastern servers. It's simply easier to recruit for a time that works better across the whole continent.
